Blue-Cheese Stuffed Celery

This is one of my all-time favorite snacks - and would eat it ANY day, not just on game day. I will typically eat anything if it has blue cheese in it, on it, or around it.

For this recipe, you can use either Roquefort or Gorgonzola, whichever you prefer. With the cool, crunch of the celery, this is a match made in heaven. You can stuff celery with many things to enhance this popular healthy vegetable, but this version is so good you’ll eat the whole plate and be begging for more! Stuffed celery is a great appetizer that can be whipped up in minutes and can be made ahead of time. If making it ahead of time, just cover with plastic wrap and refrigerate. Or, if you're taking it on the road and want to assemble it later, you can pack the washed and cut-up celery in one Tupperware and the stuffing in another. Don't forget the paprika!

Recipe - Blue Cheese Stuffed Celery

Serves: 6-8
Time: 10 minutes

Ingredients

12 celery stalks, cut into 1-inch pieces
1 (8oz) package of cream cheese, softened
8oz blue cheese, crumbled
2 Tablespoons Worcestershire sauce
1 dash of ground black pepper
1 dash of hot sauce (optional)
Paprika for garnish

Instructions

Place the celery on a serving dish. In a medium mixing bowl, combine the cream cheese, blue cheese, Worcestershire sauce, pepper, and hot sauce (optional) and blend well. Stuff each piece of celery with the cheese mixture and sprinkle a little paprika on each one.
