Chicken Pot Pie

As a child, this was probably my most requested meal.

For me, chicken pot pie is the ultimate comfort food. Every bite warms you from the inside out. It is one of the easiest recipes to make. I like any recipe that only takes about 30 minutes to prep and the oven does the rest of the work! I've made many variations of chicken pot pie over the years - some with the pie crust on top and bottom, just on the bottom and just on the top, like this one. And, I have used regular pie crust, crescent rolls, and puff pastry. I love this recipe because the light flakiness of the puff pastry doesn't overwhelm the pie filling. Any recipe from Southern Living is sure to be a winner in my book!
